Here’s a very simple and flavorful seafood dish from the Mexican coast that’s low in fat, calories and carbs.   What more could you ask for?

Pescado a la Veracruzana

(Veracruz Style Fish)

2 lbs Red Snapper (or other firm-fleshed white fish)

Olive Oil

1 Large Onion, Chopped

1 Can Tomatoes (28 oz)

1 Can Pimentos (~3 oz)

1 Jar Green Olives (3-5 oz)

1 Tbsp Capers

Salt and Pepper to Taste

Preheat oven to 350^o. Sautee onion in oil until translucent but not browned.  Add tomatoes, salt and pepper.  Cook about 5 minutes to blend flavors.  Put fish in a casserole dish coated with non-stick cooking spray.  Add pimentos, olives and capers.  Pour sauce over fish.  Bake at 350 ^o for 25 minutes or until fish is opaque and flakes easily with a fork, but is not overdone.  Serves 6.
